Description
Fermentation took place in tank for 25 days at temperatures
of 13°C – 14°C. 35% of the final blend was fermented in barrels with
differing degrees of toast. 25% of the wine underwent malolactic
fermentation, to obtain smoother wines with greater aromatic
complexity.
